The Best Salad with Orange

After moving to Spain, oranges have become a stable go-to in salads. The inspiration for this salad came from my favorite vineyard in Catalunya, which I will soon post about. Heaven on earth, I tell you.

Back on track. The day before the COVID quarantine hit Spain, me, my husband, and our dog were the only guests on this vineyard, and the family who owns the place offered to cook us lunch, as all of the restaurants nearby were closed. This was without a doubt the best meal I have had in my life. We got to enjoy a four-course lunch in the most gorgeous sunshine you can imagine, over the most majestic mountain view. The pleasure kick-started with a delicious and fresh salad with orange.

For my recipe, I used cabbage and kale which makes it a filling meal in itself. Add nuts and cheese, and you’ve got yourself a killer lunch. Beautiful food, beautiful flavors. What’s not to like. If you favor a lighter summer version, try it with mixed green leaves and cherry tomatoes. For this recipe, I would use balsamic vinegar instead of mustard for the dressing.

Either way, I love this salad as a side for potato pizza with goat cheese or gorgonzola. Yum!

Delicious Salad with Orange

Total time 10 minutes, Serves 4

Ingredients Preparation
1 cabbage

2 big handfuls of kale

1 red onion

2 oranges

For dressing

Juice from 1 orange

2 tablespoons of good olive oil

1 tablespoon of coarse mustard

1 teaspoon of dijon

Salt & pepper to taste

  1. Shred the cabbage and kale.
  2. Slice the onion in half circles.
  3. Cut out the orange in fillets.
  4. Mix the dressing and toss everything together.
  5. Easy!
