Mexican Salsa Roja

I have many favorite kitchens, but the Mexican is definitely always one of my top choices. What’s better than a juicy taco dripping of goodness, soaked in amazing, spicy salsa? To me, the best kind of Mexican food experience is the one that includes several homemade salsas on the table. Nothing beats drizzling a bit on before every bite and getting the warmth and the surprise of the heat. Do you feel your mouth watering? I know mine is.

This is my take on a freestyle salsa roja, that turned out amazingly good. Super simple, super delicious. A sauce that goes well with everything. Don’t limit yourself to tacos, this baby is heaven on toast, eggs, chicken, you name it!

If you can’t get your hands on tomatillos, don’t freak out. It works just fine with regular tomatoes as well.

Mexican Salsa Roja

Total time 10 minutes, Serves 4

Ingredients Preparation
1 red tomato

3 tomatilloes

1 jalapeño

2 cloves of garlic

1/2 onion

1 teaspoon of dried chili

A bunch of fresh cilantro

2 tablespoons olive oil

Salt & pepper to taste

  1. Heat up a dry pan, peel the garlic and onion, and sear with the tomatoes and jalapeño. Move them around, but make sure they get a little burned on the sides to get that smokey flavor.
  2. Put in your blender. Now, the hot pan is ready for the dried chili. Roast until fragrant.
  3. Add to the blender alongside olive oil, cilantro, salt, and pepper.
  4. Blend it until you have the desired texture. I like it pretty smooth.
  5. Bottle up your beauty when it has cooled a bit, and keep it in the fridge. I imagine it will stay fresh for a few days, but I never had any left after day two, just saying.
