Broccoli Buns

The first time I made broccoli buns were in a search for buns without yeast, as the store was out and I was craving homemade bread. Struggles! I’ve tried different recipes, and this one is my go-to now. These are more filling than most of the other versions out there because they are made with rye flour, but you can use whatever flour you have in your cabinet. It’s so satisfying using that last flour in the back, am I right?!

It takes less than 5 minutes to make the dough, and you can use them for a meal at any time of the day. They go great with tuna salad or as an alternative to burger buns.

Broccoli Buns Recipe

Total time 25 minutes, Serves 8

Ingredients Preparation
1 small broccoli

300 g / 10 oz flour (I used rye)

3 eggs

1 dl milk

2 teaspoons baking soda

1 teaspoon salt

 

  1. Put your broccoli in a food processor and blend to small pieces.
  2. Mix well with all the other ingredients.
  3. Let rest while you heat the oven to 200 C / 400 F.
  4. Shape 8 buns with a spoon and bake for 15-20 minutes.
  5. Et voilĂ !
